Ingredients

  • 6 eggs
  • 3 bacon slices
  • Spinach
  • Diced tomatoes
  • Almond slices
  • Shredded cheese
  • Fresh oregano

Directions

  1. Preheat oven to 350 degrees F.
  2. Whip eggs in a bowl.
  3. Dice bacon slices and tomatoes.
  4. In a bowl, mix egg with handful of spinach, diced tomatoes, almond slices, and fresh oregano. Add pinch of cheese.
  5. Pour mix into oiled muffin tin.
  6. Bake for 20 minutes.

Makes: 6 muffins • TOTAL TIME: 30-35 minutes
