Claire’s Easy Egg Breakfast Muffin
- 6 eggs
- 3 bacon slices
- Diced tomatoes
- Almond slices
- Shredded cheese
- Fresh oregano
- Preheat oven to 350 degrees F.
- Whip eggs in a bowl.
- Dice bacon slices and tomatoes.
- In a bowl, mix egg with handful of spinach, diced tomatoes, almond slices, and fresh oregano. Add pinch of cheese.
- Pour mix into oiled muffin tin.
- Bake for 20 minutes.
Makes: 6 muffins • TOTAL TIME: 30-35 minutes
